Took this recipe out for a test drive tonight before serving it up at the lake this weekend :) It turned out good. The potatoes, parsley and scallions were from the garden. The eggs were provided by my "girls" pictured here chilling out with their "pecker wrecker" frozen treat.

More Zucchini Salsa
Oh shoot me now...I'm so over this recipe. 37 pints of this stuff. The hubster wanted a year's worth and I had to promise not to give any away this year :) So I did the math.....37 pints divided by 52 weeks a year is .71....so if he eats a little less than 3/4 of a jar per week, it should last until next year's garden starts coming in. Pace yourself dude :) Still have zucs coming in. Making Zucchini Apple Loaf Cake and Lemon-Thyme Zucchini on flat bread tomorrow. Pics if it turns out good....no pics if it's a dud. :)
